Sponge cakes are so much fun to make and so delicious!! I still remember my childhood days when my mom used to cook yummy cake.
While the entire kitchen used to be filled with the fragrance of vanilla, I would sit and watch mom pour the batter into the tin and put it in the oven to cook.
So this recipe is dedicated to mom, whose awesome cakes made me want to bake.
- All purpose flour, 200 g
- Powdered Sugar, 200 g
- Refined Oil, 200 ml
- Eggs, 4
- Baking powder, 2 tsp
- Vanilla essence, 1/2 tsp
- Raisins, 1/2 Cup
- Almonds, 1/4 Cup
- Chocolate chips, 1/2 cup
Sift the dry ingredients and keep aside. Cream sugar, vanilla essence and eggs together till light and fluffy.
Add half of the flour and baking powder mix and fold lightly. Pour in the oil and mix in gently.
Now add the remaining flour mixture and lightly fold it into the egg mixture. Add the raisins, almonds and chocolate chips and pour into a lightly greased baking tin.
Preheat the oven at 180 Celcius and bake the cake for 40 mins or till a knife comes out clean when inserted into the cake.
Lightly dust powdered sugar on top and serve warm.
