Bugs bunny is  among the top 5 animated characters in my list. First of all, he’s got the looks, he’s smart and witty and health conscious (after all, he only eats carrots).

My carrot frenzy has been there ever since I was a kid. My two favourite things to eat: Carrot and laddos. So, till the time we are enveloped by the cold winds and dull temperatures of winters, I try to perk up the day by indulging in some fun cooking.

With multiple ideas for side dishes, I thought I would write another post on the next recipe is simple and healthy, taking in the goodness of carrots, beans and cauliflower.

Braised Carrots, Beans and cauliflower

 
 

 

I love me carrots!

 

Ingredients

  • 2 large Carrots, peeled and diced
  • 200 g beans, cleaned and chopped into 2 inch stems
  • 1/2 cauliflower( big), cut into flowerets
  • 2 tbsp sunflower oil
  • 1 tsp ground cumin
  • 1 tsp whole coriander seeds
  • 1 inch ginger stick, finely chopped
  • 1 tsp garam masala
  • juice of half a lime
  • 1/2 tsp tumeric
  • Salt and black pepper to taste
  • 1 cup water
  • chopped parsely and toasted sesame seeds for garnishing

Method

Heat oil in a non-stick pan and add the ginger to saute. Add the cumin powder, coriander seeds and saute till they begin to splutterfollowed by adding tumeric.

Add the cut vegetables and salt/ pepper ( 2tsp salt approx) and mix well so that the oil coats the vegetables.

Turning the flame on high, add water so that it begind to boil. Now simmer the flame and  cover the pan and cook till vegetables are tender.

Add chopped parsely and garam masala and mix well. If the vegetables are tender and water is left, increase the flame so that the water evapourates and the vegetables are roasted tell.

Add lime juice and mix. Toss some sesame seeds and chopped parsley and enough with hot chapatis and some raita!
