Monday blues made me want to shake things up and try something new. Baking the same old pound cake and its variations was not tempting enough so this baking session had me put on my thinking cap. Digging deep into my cookbooks, I found a recipe which was just perfect : Pina colada Cupcakes.
We all love the sweet concoction of pineapples, coconut and rum (roughly speaking) so pina colada inspired cup cake just had to be done .
Pina Colada Cupcakes
Ingredients
Flour – 300 g
Baking Powder – 2 tsp
Eggs – 2
Butter – 125 g
Sugar – 250 g
Pineapple Juice – 120 ml
Rum (preferably Malibu) – 60 ml
Desiccated Coconut – 75 g
Pink of salt
Method
Mix the flour and the baking powder. Separate the eggs. Cream the sugar and butter. Add the egg yolks and whisk till light and creamy.
Alternating the flour mixture and the pineapple juice, mix the batter followed by stirring in the coconut. Whisk the egg white with a pinch of salt and fold the batter into it.
Preheat the oven to 180 degree celsius and line the cupcake tray with paper liners. Fill the cupcakes 2/3 and bake for 25 mins or till a needle inserted in the centre comes out clean.
